Chef-Herbalist-Farmer-Educator Elona Trogub invites you to infuse your cooking intentionally with medicinal herbs and spices. Learn to pair flavors and gain a working knowledge of how plants and mushrooms can enliven dishes as well as provide potential benefits to the body throughout the seasons.

About the facilitator:
Elona Trogub took over as the head chef at Treebird Market in June of 2022. Developing a thriving regional food system is her life-long passion. She has spent the past 20 years toggling between full-time farming (most recently helping launch Gorge Greens Microgreens) and professionally cooking while continuously developing her community herbalism practice. She weaves these trades together in her unique flavor-forward, place-based and health-centered approach in the kitchen. She’s currently writing a cookbook on place-based component cooking with a focus on flavor as medicine.
